If you’re looking for a quick dinner idea, check out this one! You can use any protein and veggies, super versatile!
Ingredients:
1 tbsp cooking oil
3 x barramundi fillets
1 onion, chopped
Optional 1 tbsp minced garlic
1-2 tbsp red Thai curry paste
200mL coconut cream
200mL stock (1 tbsp San Elk Organic Stock Powder - Chicken + 200mL water)
1/2 cup frozen peas
1 small carrot, cubed
Method:
Pan fry Barramundi to golden brown
Add onion & veggies till onion starts to soften
Remove Barramundi from pan & add in stock Powder
Add in Red Curry paste & coconut cream + mix
Add fish back in & simmer till all combined & cooked through
