Chicken with Hummus


Let’s put a modern twist on a Middle Eastern classic.

Hummus with Chicken is a super easy and delicious dish, that combines the tarte flavours of the meat with the creamy taste of the hummus.  

The best part? It’s a one-pan kinda dish, that will make the whole family happy  


INGREDIENTS:

1tbs butter

500g chicken (mince)

½ Zucchini (quartered)

½ cup mushrooms (roughly chopped)

1tbs butter

½ brown onion (roughly chopped)

1 clove garlic (crushed and chopped)

1 tsp cumin

1 tsp dried oregano

100g fetta (crumbed)

Salt and pepper to taste

1 tub of your favourite hummus


METHOD:

  1. Place a pan over medium heat and add the butter. Once melted, add the onion and garlic.

  2. Cook for a few minutes until the onion is translucent and fragrant. Add chicken and stir, coating all the chicken with the butter, onion and garlic. Let it cook for a couple of minutes before adding San Elk Chicken Stock.

  3. Add cumin, oregano and salt and pepper. Stir until everything is well combined.

  4. At this stage, throw in the Zucchini and mushrooms, and reduce heat to low allowing everything to cook for a further five minutes.

  5. Check to make sure that the chicken is cooked through. If not, then leave it on the heat until it is.

  6. Once you take it off the heat, crumb the fetta into the pan and give everything one last mix through.

  7. To serve, smear a sizable amount of hummus onto the plate and place a couple of spoons of the chicken mix on top. Serve on the side of your favourite salad (we love a Lebanese fattoush!)
